Instructions
- Preheat the oven to 325°F (163°C) to ensure it reaches the right temperature by the time your cheesecake is ready to bake.
- Combine the graham cracker crumbs, melted butter, and 1/4 cup sugar in a medium bowl until it resembles wet sand; press it into the bottom of a 9-inch springform pan.
- Beat the softened cream cheese with 1 cup of sugar in a large mixing bowl until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and mix until everything is combined.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set but still slightly jiggles.
- Remove from the oven and let cool to room temperature, then chill in the fridge thoroughly.
- Whip the heavy cream in a separate bowl until soft peaks form.
- Spread the whipped cream over the cooled cheesecake, piping for elegance if desired.
- Chill in the refrigerator for at least 240 minutes for flavors to meld.
