Description

A comforting one-pan meal combining chicken, garlic, and Parmesan in a creamy sauce with penne pasta.


Ingredients

  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 4 cloves garlic (minced)
  • 2 cups chicken broth
  • 1 1/2 cups milk
  • 8 oz penne pasta (uncooked)
  • 1 cup grated Parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 2 tablespoons butter
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the bite-sized chicken pieces, season with salt, pepper, garlic powder, and Italian seasoning. Cook for about 5-7 minutes until browned and cooked through.
  2. Add the minced garlic to the pan and stir. Cook for another minute until fragrant.
  3. Pour in the chicken broth and milk, and stir. Toss in the uncooked penne pasta, bring to a gentle boil, reduce heat to low, cover, and simmer for about 12-15 minutes.
  4. Remove from heat and stir in the grated Parmesan cheese, shredded mozzarella, and butter until melted into a creamy sauce.
  5. If using, sprinkle with chopped fresh parsley and serve warm.

Notes

Pair with a side salad and garlic bread for a complete meal. Leftovers can be stored in an airtight container for up to 3 days.
