A comforting one-pan meal combining chicken, garlic, and Parmesan in a creamy sauce with penne pasta.

- 2 tablespoons olive oil
- 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 4 cloves garlic (minced)
- 2 cups chicken broth
- 1 1/2 cups milk
- 8 oz penne pasta (uncooked)
- 1 cup grated Parmesan cheese
- 1 1/2 cups shredded mozzarella cheese
- 2 tablespoons butter
- Chopped fresh parsley (optional, for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the bite-sized chicken pieces, season with salt, pepper, garlic powder, and Italian seasoning. Cook for about 5-7 minutes until browned and cooked through.
- Add the minced garlic to the pan and stir. Cook for another minute until fragrant.
- Pour in the chicken broth and milk, and stir. Toss in the uncooked penne pasta, bring to a gentle boil, reduce heat to low, cover, and simmer for about 12-15 minutes.
- Remove from heat and stir in the grated Parmesan cheese, shredded mozzarella, and butter until melted into a creamy sauce.
- If using, sprinkle with chopped fresh parsley and serve warm.
Notes
Pair with a side salad and garlic bread for a complete meal. Leftovers can be stored in an airtight container for up to 3 days.
