Ingredients

  • 1 1/2 lbs beef sirloin or stew beef, sliced into bite-size strips
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt & black pepper, to taste
  • 12 oz egg noodles (or wide pasta of choice)
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1/2 cup beef broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella (optional, for extra creaminess)
  • 1/2 tsp Italian seasoning
  • 1/2 tsp black pepper
  • 1/2 cup reserved pasta water (as needed)
  • Fresh parsley (for garnish)
  • Extra Parmesan (for garnish)
  • Cracked black pepper (for garnish)

Instructions

  1. Cook the noodles: Bring a large pot of salted water to a boil. Add the noodles and cook until al dente according to package instructions. Reserve 1/2 cup of the pasta water before you drain the noodles and set them aside.
  2. Sear the beef: Heat olive oil in a large skillet over medium-high heat. Add the sliced beef, seasoning it with garlic powder, smoked paprika, salt, and pepper. Sear the beef for about 3–4 minutes on each side until it’s browned and tender. Once cooked, add butter to the skillet, toss to coat the beef, and then remove it from the skillet and set aside.
  3. Build the garlic Parmesan sauce: In the same skillet, melt 3 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 30 seconds, or until fragrant but not browned. Pour in the beef broth and heavy cream, stirring gently to combine. Let it simmer for about 3–4 minutes until the sauce has slightly thickened.
  4. Add the cheese: Stir in the grated Parmesan and mozzarella (if using) until melted and smooth. Season the sauce with Italian seasoning and black pepper, adjusting to taste. If the sauce feels too thick, use the reserved pasta water a little at a time until you achieve a silky consistency.
  5. Combine everything: Return the cooked noodles and seared beef to the skillet, tossing everything together until the noodles and beef are fully coated in the creamy garlic Parmesan sauce.
  6. Serve & garnish: Plate the dish hot, garnishing with fresh parsley, extra Parmesan, and cracked black pepper. Enjoy this creamy goodness immediately!

Notes

For variations, add mushrooms, bell peppers, or spinach. This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
