  • 2 tbsp butter (for the filling)
  • 2 cloves garlic (minced)
  • 2 tbsp cream cheese
  • 3 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • 1 tbsp chopped parsley
  • Salt and pepper to taste
  • 1 can refrigerated biscuit dough (8 pieces) or 2 cups flour (for homemade biscuits)
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 6 tbsp cold butter
  • 3/4 cup cold milk or buttermilk
  • 4 tbsp melted butter (for brushing)
  • 2 cloves garlic (grated)
  • 1 tbsp fresh parsley (for garnish)
  • Pinch of paprika (for garnish)

Instructions

  1. Make the Lobster Filling: Start by melting 2 tablespoons of butter in a pan over low heat. Once the butter is bubbly, add in the minced garlic and sauté for about 30 seconds until fragrant—be careful not to let it burn! Stir in the cream cheese, mayonnaise, lemon juice, paprika, salt, and pepper. Gently fold in the chopped lobster meat and remove from heat. Set it aside to cool slightly.
  2. Prepare the Biscuits (Canned): If you’re using canned biscuits, simply flatten each biscuit slightly with your hands. For homemade biscuits, mix the flour, baking powder, and salt in a bowl. Work in the cold butter until the mixture is crumbly. Slowly pour in the milk and mix until a dough forms. Turn it out onto a floured surface and cut it into 8-10 biscuits.
  3. Stuff & Shape: Take 1 to 2 tablespoons of the lobster filling and carefully place it in the center of each biscuit. Pinch the dough around the filling to seal it completely, making sure there are no openings. Place each stuffed biscuit seam-side down on a baking tray lined with parchment paper.
  4. Bake: Brush the tops lightly with garlic butter (melted butter mixed with the grated garlic) for that mouthwatering flavor, then pop them in a preheated oven at 400°F (200°C). Bake for 15-18 minutes until they are golden and puffed up.
  5. Finish: Once they’re baked, take them out and brush them generously with the remaining garlic butter. Sprinkle with fresh parsley and a pinch of paprika for garnish. Serve these warm and watch them disappear!
