Description

A comforting and flavorful dish combining crispy chicken in garlic-Parmesan butter with creamy Cajun-spiced rice.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into cutlets or chunks
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 3/4 cup grated Parmesan cheese
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • Salt & black pepper, to taste
  • 1.5 cups long-grain white rice
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 tsp garlic powder
  • Fresh parsley (optional garnish)
  • Extra Parmesan (optional garnish)
  • A drizzle of garlic butter (optional garnish)

Instructions

  1. Begin by melting the butter in a medium saucepan over medium heat. Once melted, stir in the rice and toast it for about 1 minute. Add in the chicken broth, Cajun seasoning, garlic powder, and a pinch of salt. Bring this mixture to a boil, cover, and lower the heat to simmer for about 15–18 minutes, or until the rice is tender and has absorbed the liquid. Fluff it with a fork and stir in the heavy cream before serving.
  2. While the rice cooks, season your chicken pieces generously with Cajun seasoning, smoked paprika, salt, and black pepper.
  3. Heat the olive oil and remaining butter in a large skillet over medium-high heat. Once hot, add the chicken, cooking for about 4–5 minutes per side, or until golden brown and fully cooked.
  4. With the heat still on medium, toss the minced garlic into the skillet and sauté for around 30 seconds.
  5. Sprinkle the grated Parmesan into the pan with the garlic, allowing it to melt slightly into the butter.
  6. Return the chicken to the skillet, spooning the garlic-Parmesan butter over each piece. Cook for another 1–2 minutes.
  7. To serve, spoon the creamy Cajun butter rice onto plates and top each with golden garlic Parmesan chicken. Garnish with fresh parsley, extra Parmesan, and garlic butter if desired.

Notes

Pound your chicken for even cooking. Toast the rice for better flavor. Taste as you go and adjust seasoning.
