A comforting dish featuring crispy roasted chicken drumsticks served with creamy mashed potatoes and sweet glazed carrots.

- 4 chicken drumsticks
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried thyme
- Salt & black pepper, to taste
- 3 medium potatoes, peeled & cubed
- 2 tbsp butter
- 1/4 cup warm milk
- Salt, to taste
- 10–12 baby carrots
- 1 tbsp butter
- Salt & pepper, to taste
- Chicken drippings from the pan
- 2–3 tbsp chicken broth
Instructions
- Preheat your oven to 400°F (200°C). Pat the chicken drumsticks dry with a paper towel.
- Toss the drumsticks with olive oil, garlic powder, dried thyme, and salt and pepper in a mixing bowl.
- Arrange the drumsticks on a baking sheet and roast for 40-45 minutes, turning halfway through.
- Boil salted water in a pot and cook the cubed potatoes until fork-tender (about 15-20 minutes). Drain and let sit.
- Mash the potatoes with butter and warm milk until creamy, seasoning with salt to taste.
- Sauté the baby carrots in 1 tbsp of butter over medium heat until tender and glossy—about 5-7 minutes.
- Add chicken broth to the roasting pan after removing the chicken and deglaze to scrape up browned bits.
- Serve the chicken with creamy mash and sautéed carrots, spooning pan juices over everything.
Notes
For crispy skin, ensure chicken is dry before seasoning. Feel free to customize herbs and veggies.
