This is a very nice squash casserole and not as fatting as many which typically call for mayo. I reduced the fat some by adding about 2 T margarine instead of 1/4 cup butter and not using any butter at the end. I thought it was just as good as if I had used the full amount. Another nice thing about this recipe is that you could still taste the squash…sometimes the vegetables get lost in this type of dish.
